Squash Fritters

If you are like me you are probably running out of ideas of how to use all those vegetables from your garden. This year I have lots and lots of summer squash. I came upon this recipe on Allrecipes.com and modified it a bit to give it more flavour. It may not be the healthiest way to prepare summer squash but it was so good. This recipe serves 2-3 and can be doubled for a bigger batch.

Ingredients
2-3 summer squash (about 1 1/4 cup chopped)
1/3 cup flour
1/3 cup corn meal
1 tsp baking powder
1 egg
1 tsp garlic powder or 1 large garlic clove minced
1/2 small onion chopped (I used a scallion)
1/4 cup cheddar cheese
1 tsp salt
oil for frying

Directions
Peel, chop and boil the squash until tender about 7-10 minutes. Preheat deep fryer to 375.
Meanwhile combine the flour, cornmeal and baking soda in a bowl. In a separate bowl mix egg, garlic, onion, cheese and salt. When squash is cooked, drain and mash with a potato masher or in a food processor. Add squash to egg mixture then add dry ingredients and mix well. Drop tablespoons of mixture in heated deep fryer being careful not to add too much batter. Fry for about 4 minutes until golden brown. Enjoy!
